  • 12 hot dogs (chicken, beef, lamb, or turkey)
  • 290 grams (1 3/4 cups) yellow cornmeal
  • 175 grams (1 1/4 cups) all-purpose flour
  • 50 grams (1/4 cup) sugar
  • 14 grams (1 tablespoon) baking powder
  • 1 gram (1/4 teaspoon) salt
  • 1 egg, beaten
  • 360 grams (1 1/2 cups) milk
  • 140 grams (heaping 1/2 cup) sourdough discard
  • 14 grams (1 tablespoon) unsalted butter, melted
  • 24 grams (1 tablespoon) honey
  • Neutral frying oil

Instructions

  1. Heat neutral frying oil in a Dutch Oven or large pot to medium-high heat (350°F).
  2. Pat dry the hot dogs and insert sticks into each.
  3. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  4. In another bowl, mix egg, milk, sourdough discard, melted butter, and honey until smooth.
  5. Combine wet and dry ingredients until just mixed; some lumps are fine.
  6. Pour the batter into a tall glass. Dip each hot dog in the batter and let excess drip off before frying in hot oil.
  7. Fry for about 2-3 minutes or until golden brown on all sides.
  8. Transfer to a wire rack to drain excess oil before serving.
