  • 410 grams of bread flour (2 1/2 cups plus 3 Tbsp of flour)
  • 1/3 cup packed brown sugar
  • 1 tsp salt
  • 1/2 teaspoon baking powder
  • 2 tbsp unsalted butter (melted)
  • 2 cups of warm water
  • 2 tbsp baking soda
  • 6 tbsp melted unsalted butter (for dipping after baking)
  • coarse pretzel salt (for topping before baking)

Instructions

  1. Combine whole milk, water, and dry active yeast in a mixing bowl; let sit for 5 minutes until frothy.
  2. Add bread flour, brown sugar, salt, baking powder, and melted butter; mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in a covered bowl in a warm area to rise for 30 minutes or until doubled in size.
  5. Preheat oven to 425°F (220°C). Divide the dough into six pieces and shape each into a long rope. Twist into pretzel shapes and place on parchment-lined baking sheets.
  6. Mix warm water with baking soda; dip each pretzel briefly before sprinkling with coarse salt.
  7. Bake for about 8 minutes until golden brown. Brush with melted butter before serving.
