  • 1.5 lb boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • salt and pepper
  • 3 chopped carrots
  • 1 chopped yellow onion
  • 5 chopped garlic cloves
  • 2 diced russet potatoes
  • 2 tbsp coconut aminos
  • 1 tsp salt
  • 3/4 tsp oregano
  • 1/2 tsp rosemary
  • 1 bay leaf
  • 2 1/2 cups chicken broth
  • 1 cup almond milk (or milk of choice)
  • 2 tbsp cornstarch (or arrowroot)

Instructions

  1. Cut chicken into 1/2" pieces; season with salt and pepper.
  2. In a skillet over medium heat, heat olive oil and brown the chicken for about 5 minutes.
  3. Transfer chicken to the slow cooker; add carrots, onion, garlic, potatoes, broth, coconut aminos, herbs, and bay leaf.
  4. Cover and cook on LOW for 6 hours.
  5. In a mixing bowl, whisk almond milk and cornstarch until smooth; add to the slow cooker in the last 30–45 minutes on HIGH until thickened.
  6. Season with black pepper before serving.
