  • 1½ pounds boneless skinless chicken breasts
  • 2½ cups corn (fresh, frozen, or canned)
  • 1 medium onion (diced)
  • 2 ribs celery (diced)
  • 56 cloves garlic (smashed)
  • 4 tablespoons butter
  • 1 pound Yukon gold potatoes (diced)
  • 4 cups chicken broth (divided)
  • 46 tablespoons all-purpose flour
  • ½ cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Dice the onion and celery; smash the garlic cloves; cut potatoes into chunks.
  2. Place all ingredients except one cup of chicken broth into the slow cooker. Add three cups of broth.
  3. In a separate bowl, mix four tablespoons of flour with half a cup of reserved broth until smooth.
  4. Cover the slow cooker and cook on high for 3-4 hours or low for 6-7 hours until chicken is shreddable and potatoes are tender.
  5. For thickening, stir the flour mixture along with heavy cream into the chowder in the last 10-15 minutes of cooking.
