  • 1 lb shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed into 1-inch pieces)
  • 1 cup mushrooms (sliced)
  • 2 garlic cloves (minced)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice

Instructions

  2. Add shrimp and cook for 2–3 minutes until pink and opaque. Remove from skillet.
  3. In the same pan, add another tbsp of olive oil; sauté asparagus and mushrooms for about 3–4 minutes until tender.
  4. Stir in minced garlic, salt, and pepper; cook for an additional minute.
  5. Return shrimp to the pan; add soy sauce and lemon juice. Mix well.
  6. Serve hot over your choice of rice, noodles, or quinoa.
