  • 4 tablespoons butter
  • ¼ cup sour cream
  • 1 pound ground beef
  • 1 small onion
  • 2 cups frozen peas, carrots, and corn medley
  • ½ cup beef broth
  • 1 tablespoon tomato paste
  • ¼ to ½ cup milk
  • Salt and pepper to taste
  • 2 tablespoons flour
  • 1 teaspoon rosemary
  • ½ teaspoon thyme
  • 1 bay leaf

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Boil peeled and chunked potatoes until fork-tender; drain.
  3. Mash potatoes with butter, sour cream, milk, salt, and pepper until smooth.
  4. Brown ground beef in a skillet with diced onion; drain excess grease.
  5. Mix in frozen veggies and cook for 5-7 minutes.
  6. Stir in flour followed by beef broth and tomato paste; simmer for 10 minutes.
  7. Spread the meat mixture in a baking dish; top with mashed potatoes.
  8. Bake for about 30 minutes until golden brown.
