  • 250 g all-purpose flour
  • 100 g butter (or suitable alternative)
  • 100 ml boiling water
  • 400 g ground lamb (or beef)
  • 1 tsp finely chopped onion
  • 1 tsp white pepper
  • 0.5 tsp black pepper
  • 0.5 tsp ground mace
  • 0.25 tsp ground nutmeg
  • 1 beaten egg (for brushing)

Instructions

  1. In a saucepan, melt the butter in boiling water.
  2. Pour over flour and half the salt; stir until combined. Cool slightly, then knead until smooth.
  3. In another bowl, mix ground meat with onion and spices.
  4. Roll out pastry; cut circles for bases and tops.
  5. Fill pastry cases with meat mixture; seal edges.
  6. Brush with egg wash and bake at 180°C (350°F) for 30–35 minutes until golden brown.
