  • 4 large sweet potatoes (or 6 cups mashed)
  • 45 slices of chicken (chopped)
  • 1 tablespoon oil
  • 1 large onion (thinly sliced)
  • 1 teaspoon thyme
  • 1 teaspoon marjoram
  • 4 tablespoons unsalted butter (melted)
  • 1.5 cups shredded Swiss and Gruyere cheese
  • 0.5 cup heavy whipping cream
  • 1 large egg
  • 1.5 teaspoons salt
  • 0.25 teaspoon ground black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Butter a 9×13-inch baking dish.
  3. Cook sweet potatoes by peeling and boiling until soft; mash until smooth.
  4. In a skillet, heat oil over medium heat and sauté chopped chicken for about 4–5 minutes, then add onions and cook until golden brown.
  5. Mix the chicken and onion with the mashed sweet potatoes along with melted butter, shredded cheese (reserve some for topping), cream, beaten egg, salt, and pepper.
  6. Spoon mixture into the baking dish evenly.
  7. Bake for about 30 minutes until heated through; sprinkle remaining cheese on top and bake for an additional 5 minutes until melted.
  8. Serve warm.
