  • 1/4 cup + 2 tablespoons extra-virgin olive oil
  • 2 pounds trimmed green beans
  • Kosher salt
  • 2 to 3 teaspoons white balsamic vinegar

Instructions

  1. Preheat the oven to 450°F (or convection roast).
  2. Slice shallots thinly. Heat olive oil in a cast iron skillet and add shallots. Sizzle then reduce heat and cook for about 25–30 minutes until deep amber, stirring occasionally.
  3. On a rimmed sheet pan, toss trimmed green beans with remaining olive oil and kosher salt. Roast for about 15 minutes, stir, then roast for an additional 5–10 minutes until charred at edges.
  4. Toss roasted beans with vinegar, adjust seasoning if needed, then transfer to a serving platter and top with caramelized shallots.
