  • 8 oz coleslaw mix (finely shredded cabbage and carrots)
  • 3.5 oz fresh shiitake mushrooms (diced)
  • 0.3 oz ginger (grated)
  • 0.3 oz garlic (grated)
  • 3 scallions (diced)
  • 4 tbsp avocado oil (divided)
  • 10 pieces rice paper (22 cm/8.67 inches each)
  • ¼ tsp coarse sea salt (plus a small pinch, or to taste)
  • 1 tbsp coconut aminos (or low sodium soy sauce)
  • 2 tsp toasted sesame oil

Instructions

  1. In a mixing bowl, combine coleslaw mix, diced shiitake mushrooms, grated ginger, grated garlic, diced scallions, 2 tbsp avocado oil, salt, coconut aminos, and sesame oil; mix well.
  2. Soften each rice paper by dipping it in warm water for 10–15 seconds until pliable.
  3. Lay softened rice paper flat and place about 2 tablespoons of filling in the center. Fold sides over filling and roll tightly from the bottom.
  4. Heat remaining avocado oil in a non-stick skillet over medium heat and fry dumplings for 3–4 minutes on each side until golden brown.
