  • 1/2 cup whole wheat flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 Tablespoon baking powder
  • 1 teaspoon ground cardamom
  • 3/4 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup frozen and grated unsalted butter
  • 1 1/2 cup rhubarb (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In one bowl, mix together the flours, sugar, salt, baking powder, and cardamom.
  3. Add grated butter to the dry ingredients and mix until crumbly.
  4. In another bowl, whisk together the buttermilk, egg, and vanilla extract.
  5. Combine wet and dry ingredients gently until just mixed; fold in chopped rhubarb.
  6. Turn out onto a floured surface, shape into circles, cut into wedges, and freeze for 20–30 minutes.
  7. Brush with reserved buttermilk before baking for about 15–20 minutes on the lower rack until golden brown.
