  • 1 large stalk of rhubarb (or 2 small stalks)
  • 2 cups stale bread (or brioche)
  • 1 ½ cups milk
  • ½ cup cream
  • 1 Tbsp sugar
  • 1 oz butter (melted)
  • 1 egg
  • ¼ tsp nutmeg (grated)
  • ½ yield homemade custard recipe
  • ½ tsp orange zest

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Chop the rhubarb into pieces. Optionally roast for enhanced flavor.
  3. In a mixing bowl, whisk together milk, cream, sugar, melted butter, egg, and nutmeg.
  4. Add chopped rhubarb and mix well. Fold in stale bread cubes until coated.
  5. Pour the mixture into a greased baking dish and bake for about 30 minutes until set and golden brown.
  6. Prepare half of your homemade custard and stir in orange zest before serving.
  7. Let cool slightly before serving warm with a drizzle of custard.
