  • 28 oz can whole plum tomatoes (including juice)
  • 1 small onion
  • 3 cloves garlic
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 1/2 tsp salt
  • 2 tsp granulated sugar
  • 3 tbsp lime juice
  • 1 cup cilantro (tightly packed)

Instructions

  1. Pour canned tomatoes with juice into a food processor or blender.
  2. Peel and roughly chop the onion, then add to the tomatoes along with peeled garlic cloves.
  3. Add ground cumin, ground coriander, salt, sugar, and lime juice.
  4. Top with tightly packed cilantro and pulse until desired consistency is reached—smooth or chunky.
  5. Transfer salsa to an airtight container and refrigerate for at least 3 hours before serving.
