  • ¾ cup brown sugar
  • ½ cup oil or melted butter

  • ¼ cup granulated sugar (for streusel topping)
  • ½ cup flour (for streusel topping)
  • ½ tsp cinnamon (for streusel topping)
  • 4 tbsp cold butter (cubed, for streusel topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, mix the pumpkin puree, brown sugar, oil or melted butter, eggs, and vanilla extract until well combined.
  4. Gently fold the dry ingredients into the wet mixture until just combined; some lumps are okay.
  5. Pour the batter into the prepared loaf pan.
  6. In a small bowl, prepare the streusel topping by combining brown sugar, granulated sugar, flour, and cinnamon; then mix in cubed butter until crumbly.
  7. Sprinkle the streusel over the batter and bake for 50–60 minutes or until a toothpick comes out clean.
  8. Allow cooling in the pan for about 10 minutes before transferring to a wire rack.
