  • 4 large russet potatoes (approximately 4 cups mashed)
  • ½ cup glutinous rice flour
  • ¼ cup cornstarch
  • ¾ cup shredded cheese
  • ½ tsp salt
  • ½ tsp pepper
  • Oil for frying

Instructions

  1. Peel and cut potatoes into chunks. Boil in salted water until fork-tender (15-20 minutes). Drain and mash until smooth.
  2. In a mixing bowl, combine warm mashed potatoes with glutinous rice flour, cornstarch, shredded cheese, salt, and pepper. Mix until smooth.
  3. Press the dough into a lined rectangular pan and freeze for 30 minutes to firm up.
  4. Cut into sticks measuring approximately 1 inch x 1 inch x 6 inches.
  5. Heat oil in a deep fryer or large pan to 320°F (160°C). Fry sticks for about 5 minutes until slightly golden; set aside on a cooling rack.
  6. Increase oil temperature to 350°F (175°C) and fry again for another 30 seconds to 1 minute until golden brown.
  7. Drain excess oil and serve hot with your choice of dipping sauces.
