  • 1½ cups dill pickle juice
  • 1 tablespoon brown sugar
  • 2 teaspoons kosher salt
  • 1½ cups Panko bread crumbs
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 2 large eggs

Instructions

  1. Marinate the chicken in a large bowl or resealable bag with dill pickle juice, brown sugar, and kosher salt for at least 1 hour (or up to 24 hours).
  2. Preheat your oven to 425°F. Spread Panko breadcrumbs on a baking sheet and toast for about 5-7 minutes until golden.
  3. In a shallow bowl, combine flour, salt, garlic powder, and chili powder. In another bowl, whisk eggs with water.
  4. Take marinated chicken and coat each piece in the flour mixture, dip in the egg mixture, then coat with Panko breadcrumbs before placing them on a parchment-lined baking sheet.
  5. Bake for 18-25 minutes until the internal temperature reaches 165°F.
