  • 2 Deep Dish Pie Crust (optional)
  • 4 Ounces Chicken Sausage
  • 1 Tablespoon Olive Oil
  • 1 Small Onion (about 1/2 cup), chopped
  • 1 Clove Garlic, minced
  • 5 Ounces Mushrooms (Baby Bella or Shiitake)
  • 1 Tablespoon Apple Juice
  • 4 Cups Fresh Spinach (or Kale) or 2 Cups Frozen Spinach (5 Ounces)
  • 2 Cups Swiss or Cheddar Cheese
  • 8 Eggs
  • 1 1/2 Cups Milk (1%)
  • 2 teaspoons Salt
  • 1/2 teaspoon Black Pepper

Instructions

  1. Preheat oven to 375°F.
  2. If using pie crusts, bake them according to package instructions.
  3. In a skillet over medium heat, cook the sausage until browned.
  4. Add onions and garlic; sauté until soft.
  5. Stir in mushrooms and cook until softened; add apple juice and cook for another minute.
  6. Mix in spinach (and kale if using) until wilted; if using frozen spinach, heat through.
  7. Distribute half of the mixture into each pie shell or greased baking dish.
  8. Sprinkle cheese over the filling.
  9. In a bowl, whisk eggs and milk together; pour over the filling in each dish.
  10. Bake for 40 to 50 minutes until golden brown.
