  • 13 graham crackers
  • ¾ cup pecan halves
  • ¾ cup light brown sugar (divided)
  • ½ cup melted butter
  • 24 ounces full-fat cream cheese (softened)
  • 1 cup sour cream
  • 4 large eggs
  • 1 tablespoon all-purpose flour
  • 2 teaspoons vanilla extract
  • ¾ cup heavy cream
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 350°F and lightly grease a 9×13 inch baking dish.
  2. In a food processor, blend graham crackers, pecans, and 3 tablespoons of brown sugar until fine crumbs form. Mix in melted butter.
  3. Press crumb mixture into the bottom of the baking dish and bake for 10 minutes.
  4. Clean the food processor and combine softened cream cheese, sour cream, remaining sugar, eggs, flour, vanilla extract, and salt. Process until smooth; pour over crust.
  5. Bake for 30-40 minutes until the center is set. Allow cooling slightly.
  6. For topping: In a saucepan over medium heat, combine chopped pecans, remaining brown sugar, heavy cream, melted butter, cinnamon, and salt; boil while stirring for about 2-3 minutes before removing from heat.
  7. Pour warm topping over cooled cheesecake and refrigerate for at least two hours before serving.
