  • 1 1/2 pounds boneless, skinless chicken breasts
  • 3 cups chopped broccoli florets
  • 2 large red bell peppers
  • 1 tablespoon sesame oil
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon freshly squeezed lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • 2 teaspoons honey
  • 1/4 cup water
  • 1/2 teaspoon red pepper flakes plus additional to taste
  • 2 tablespoons extra-virgin olive oil
  • 3 cups cooked brown rice (for serving)
  • Chopped fresh cilantro and chopped peanuts (for topping)

Instructions

  1. In a medium bowl, whisk together the sauce ingredients: peanut butter, sesame oil, lime juice, garlic, ginger, soy sauce, honey, water, and red pepper flakes until the mixture is smooth.
  2. Meanwhile, heat 1 tablespoon of olive oil in a large nonstick skillet or wok over medium-high heat. Add the chicken pieces and brown them on all sides until fully cooked through, about 5 to 6 minutes. Remove the cooked chicken from the skillet and set aside on a plate.
  3. Add the remaining 1 tablespoon of olive oil to the skillet. Toss in the broccoli florets and bell pepper slices. Cook these vegetables until they are crisp-tender, approximately 6 to 8 minutes. Add more garlic, ginger, soy sauce, and half of the green onions. Stir well to coat everything evenly and cook for an additional minute.
  4. Return the chicken back into the skillet along with the prepared peanut sauce. Let everything simmer together for a few minutes until the sauce thickens slightly. Sprinkle with the remaining green onions before serving.
  5. Serve hot over brown rice and garnish with chopped cilantro and peanuts for an added crunch!
