  • 1 lb extra-large shrimp (peeled and deveined)
  • 2 large egg whites
  • 8 tbsp potato starch (or tapioca starch)
  • ½ cup walnuts (unsalted)
  • 4 tbsp mayonnaise
  • 1 tbsp honey (or keto honey)
  • 22.5 tbsp evaporated milk (or sugar-free coconut condensed milk)
  • Avocado oil for frying
  • Chopped scallions for garnish

Instructions

  1. Butterfly each shrimp by making a shallow cut along the back to ensure even cooking.
  2. Set up three bowls: one with whisked egg whites, one with potato starch, and a large plate for coated shrimp. Dip each shrimp in egg white, then coat with potato starch.
  3. Heat avocado oil in a cast iron or stainless steel pan over medium-high heat until it reaches 350°F (177°C).
  4. Fry the shrimp in batches for about 3 minutes until golden brown. Transfer to a wire rack to maintain crispiness.
  5. In a bowl, mix mayonnaise, honey, and evaporated milk until combined.
  6. Toss walnuts with two tablespoons of the sauce until coated.
  7. Serve fried shrimp on a platter topped with sweetened walnuts and drizzle with remaining sauce. Garnish with chopped scallions.
