4 skin-on salmon fillets (about 6 oz each)
Salt & black pepper
2 tablespoons olive oil
4 tablespoons butter
2 cloves garlic (minced)
1 teaspoon lemon zest
Juice of 1 lemon (freshly squeezed)
2 tablespoons chopped fresh parsley
Instructions
Season salmon fillets with salt and black pepper on both sides.
Heat olive oil in a nonstick skillet over medium-high heat. Add salmon, skin side down, and cook for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for an additional 3-4 minutes until cooked through. Remove from pan and set aside.
In the same pan, lower heat to medium, add butter and garlic, sautéing for about a minute until fragrant. Stir in lemon zest and juice; let simmer for 2 minutes until slightly thickened.
Mix in parsley, salt, and pepper, then return salmon to the skillet to coat in the sauce before serving.
