  • 1 cup refried beans
  • 1 cup shredded Mexican cheese
  • 12 corn tortillas
  • 1 teaspoon avocado oil plus additional for greasing the taquitos
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400ºF (200ºC). Line a baking sheet with parchment paper and lightly oil it.
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and stir in spices.
  3. Allow the mixture to cool slightly before combining it with refried beans and cheese in a bowl.
  4. Warm the tortillas until pliable, then fill each with about 1/4 cup of the beef mixture and roll tightly.
  5. Place seam-side down on the prepared baking sheet and lightly oil the tops.
  6. Bake for 15-20 minutes until crispy, flipping halfway through.
