  • 1 cup refried beans
  • 1 cup shredded Mexican cheese
  • 12 corn tortillas
  • 1 teaspoon avocado oil (plus additional for greasing the taquitos)
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400ºF (200ºC) and line a baking sheet with parchment paper.
  2. In a skillet, heat avocado oil over medium heat and cook the ground beef until browned (4-6 minutes). Drain excess fat.
  3. Stir in spices (paprika, chili powder, garlic powder, onion powder, salt, pepper) and cook for another minute. Remove from heat.
  4. Mix in refried beans and shredded cheese until well combined.
  5. Warm corn tortillas in a skillet or microwave until pliable.
  6. Fill each tortilla with about 1/4 cup of the beef mixture and roll tightly. Place seam-side down on the baking sheet.
  7. Brush tops lightly with avocado oil and bake for 15-20 minutes on the lowest rack, flipping halfway through until golden brown.
