  • 4 skinless salmon fillets
  • 1 cup dry orzo pasta
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • Juice from ½ lemon
  • ½ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 tsp salt (divided)
  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme

Instructions

  1. Prepare ingredients by chopping onion, mincing garlic, and seasoning salmon fillets.
  2. Heat olive oil and butter in a large nonstick skillet over medium-high heat. Sear salmon for 3–4 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, reduce heat to medium and sauté onion and garlic until soft. Add orzo and toast briefly.
  4. Pour in chicken broth, bring to a boil, then reduce heat to simmer until orzo is nearly al dente.
  5. Stir in spinach until wilted, then mix in lemon juice and Parmesan cheese.
  6. Return salmon to skillet; simmer for an additional 2–3 minutes until heated through.
