  • 6 cups chopped iceberg lettuce
  • 1 cup drained whole pitted black olives
  • 1 cup thinly sliced red onion
  • 4 medium sliced Roma tomatoes
  • 1 cup seasoned croutons
  • 6 whole pepperoncini peppers
  • ¼ cup freshly grated parmesan cheese
  • ⅔ cup extra virgin olive oil
  • ⅓ cup white grape juice vinegar
  • 3 tablespoons water
  • 2 tablespoons mayonnaise
  • 1 tablespoon granulated sugar
  • 2 teaspoons fresh minced garlic
  • 2 teaspoons lemon juice
  • 1½ teaspoons Italian seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh cracked black pepper
  • ¼ teaspoon red pepper flakes

Instructions

  1. Prepare all ingredients: wash and chop the lettuce, slice the tomatoes and onion.
  2. In a large serving bowl, layer half of the chopped lettuce followed by half of each: olives, red onion, tomatoes, and croutons. Repeat with remaining ingredients.
  3. Top with whole pepperoncini peppers and sprinkle grated parmesan cheese over the top.
  4. Make the dressing by whisking all dressing ingredients together in a small bowl or shaking them in a mason jar until well combined.
  5. Pour dressing over the salad just before serving and toss gently to combine.
