  • 10 oz mushrooms (button or baby bella)
  • 2 large boneless skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 ½ cups beef broth
  • 3 cloves garlic (minced)
  • 3 tablespoons cornstarch
  • 1/3 cup heavy cream
  • Salt
  • Pepper
  • 2 tablespoons salted butter
  • 34 tablespoons olive oil
  • 1 chicken bouillon cube or 1 tsp better than bouillon
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder
  • ½ teaspoon mustard powder
  • ½ teaspoon dried thyme
  • ½ cup dry white grape juice

Instructions

  1. Clean and slice the mushrooms; mince the garlic. Optionally, cut the chicken into bite-sized pieces.
  2. In a skillet over medium heat, add olive oil and season the chicken with salt and pepper. Cook until browned on all sides (5-7 minutes), then set aside.
  3. In the same skillet, melt butter and sauté sliced mushrooms until golden brown (about 5 minutes). Stir in minced garlic and cook for another minute.
  4. Sprinkle flour over the mushrooms; mix well. Gradually whisk in beef broth until smooth.
  5. Add soy sauce, onion powder, mustard powder, thyme, grape juice; simmer for about 20 minutes with the cooked chicken.
  6. Make a cornstarch slurry with water, stir into the sauce to thicken, then add heavy cream before serving.
