  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 1 1/2 cups warm water (about 110°F)
  • 8 ounces mozzarella cheese (cut into 1-inch cubes)
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated Parmesan cheese
  • Coarse sea salt (for sprinkling)
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter (melted)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until foamy.
  2. In another bowl, whisk together flour and salt. Gradually add to the yeast mixture until combined.
  3. Knead dough for about 5 minutes using a stand mixer or by hand for 8 minutes until smooth.
  4. Mix in chopped rosemary and grated Parmesan. Form into a ball, cover with a towel, and let rise for about an hour.
  5. Preheat your oven to 425°F (220°C) and line baking sheets with parchment paper.
  6. Punch down the dough and divide into 8 pieces. Flatten each piece, place mozzarella in the center, fold around it to seal.
  7. Roll each piece into a rope and twist into pretzel shape on the baking sheet.
  8. Boil water with baking soda; drop each pretzel in for about 30 seconds before draining.
  9. Brush with melted butter and sprinkle with coarse sea salt.
  10. Bake for 12-15 minutes until golden brown.
