  • 1/2 cup cocoa powder (45 grams)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/4 cup vegetable oil (60 ml)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1/2 cup milk (120 ml)
  • 1/3 cup freshly brewed coffee (80 ml)
  • 1 cup unsalted butter (226 grams)
  • 34 cups powdered sugar (330400 grams)
  • 1/4 teaspoon salt (to taste)
  • 23 tablespoons whipping cream (3045 ml)
  • 1/22 teaspoons mint extract
  • green food coloring
  • chocolate shavings or mini chocolate chips (for decorating, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine vegetable oil, egg, vanilla extract, and milk. Gradually add this mixture to the dry ingredients and mix until just combined.
  4. Stir in freshly brewed coffee until the batter is smooth.
  5. Fill each cupcake liner about two-thirds full with batter.
  6. Bake for 18 minutes or until a toothpick inserted comes out clean. Let cool completely before frosting.
  7. To make the Mint Buttercream, beat softened butter until creamy. Gradually add sifted powdered sugar, salt, whipping cream, and mint extract until smooth and fluffy. Add green food coloring if desired.
  8. Frost cooled cupcakes generously with mint buttercream.
