  • 2 bars (8 oz each) softened cream cheese
  • 2/3 cup granulated sugar
  • 1/3 cup sour cream (room temperature preferred)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 large eggs (room temperature preferred)
  • 3/4 cups fruity pebbles cereal (for filling)
  • Fruity pebbles cereal (for topping)
  • Whipped cream (for topping)

Instructions

  1. Preheat the oven to 325°F and line a muffin pan with paper liners.
  2. In a bowl, mix melted butter, graham cracker crumbs, fruity pebbles, and salt. Press about 1 tablespoon into each muffin liner to form the crust.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, then mix in sour cream, vanilla extract, and salt.
  4. Add eggs one at a time, mixing well after each addition. Gently fold in additional fruity pebbles.
  5. Fill each muffin liner with the cheesecake mixture until nearly full.
  6. Bake for about 20 minutes or until set but slightly jiggly in the center.
  7. Let cool completely before refrigerating for at least 2 hours before serving.
