  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 4 tbsp enchilada sauce
  • 8 ounce refried beans (1/2 can)
  • 1/2 cup shredded cheese (cheddar, mozzarella or Mexican cheese blend)
  • 1 tomato (roma or beefsteak, seeds removed and diced)
  • 1 small red onion (diced)
  • 1/4 cup black olives
  • 1/4 cup sour cream
  • 2 green onions (finely diced)

Instructions

  1. In a large frying pan over medium heat, cook 1 lb of ground beef until browned. Drain excess grease.
  2. Add 2 tbsp taco seasoning, 1/4 cup water, and 4 tbsp enchilada sauce; simmer for 1–2 minutes.
  3. Spread refried beans on one tortilla, layer with seasoned beef and shredded cheese, then top with another tortilla.
  4. Pour 1 tbsp enchilada sauce on top and sprinkle more cheese.
  5. Cook using your preferred method: air fryer (400°F for 5 minutes), oven (350°F for 8–10 minutes), or pan frying (medium heat for about 5 minutes).
  6. Serve topped with diced tomatoes, red onion, black olives, sour cream, and green onions.
