  • 1 medium head of cauliflower
  • 1 ½ cups cherry tomatoes
  • ½ cup red onion
  • ⅓ cup black olives
  • ⅓ cup green olives
  • ¼ cup fresh parsley
  • ¼ cup extra virgin olive oil
  • 3 tablespoons apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes

Instructions

  1. Blanch the cauliflower in boiling water for 1-2 minutes until slightly tender but still crisp. Transfer to an ice bath immediately to stop cooking.
  2. In a large mixing bowl, combine the blanched cauliflower, cherry tomatoes, red onion, black olives, green olives, and parsley.
  3. In a small bowl, whisk together olive oil, apple vinegar, Dijon mustard, garlic, oregano, basil, salt, pepper, and red pepper flakes (if desired).
  4. Pour the dressing over the salad mixture and toss well to coat. Cover and refrigerate for at least 30 minutes before serving.
