Instructions

  1. Cook the carrots and turnips in an Instant Pot with 1 cup of water on high pressure for 5 minutes. Allow for a quick release of pressure.
  2. Drain the vegetables thoroughly. If you prefer a thicker texture, lightly mash them before straining through a fine mesh strainer.
  3. Return the drained vegetables to the pot or place them in a bowl. Add brown sugar, butter, salt, and pepper.
  4. Mash with a potato masher until combined, then whip with an electric mixer until fluffy.
  5. Serve garnished with fresh parsley if desired.
