Ingredients

Scale
  • 1 ½ pounds boneless skinless chicken breast, cut into 1-inch pieces
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 2 teaspoons minced garlic
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 cup sun-dried tomatoes, drained
  • 1 teaspoon paprika
  • 2 teaspoons dried Italian seasoning

Instructions

  1. Cook the Pasta: Boil water in a large pot. Add salt, then cook the penne until al dente according to package instructions. Drain and set aside.
  2. Sauté the Chicken: In the same pot, heat olive oil over medium heat. Season chicken with salt and pepper and cook until golden brown on all sides (about 5–7 minutes). Remove and set aside.
  3. Prepare the Sauce: Add butter to the pot; once melted, stir in garlic until fragrant. Whisk in flour to create a roux; cook for about a minute. Gradually add chicken broth, stirring until smooth, then incorporate heavy cream.
  4. Combine Everything: Stir in parmesan cheese, sun-dried tomatoes, paprika, Italian seasoning, salt, and pepper. Return cooked chicken to the pot along with pasta. Mix well until everything is coated in sauce; heat through for another 2–3 minutes.
