  • 2 Tablespoons vegan butter
  • 1 large shallot (peeled & finely diced)
  • 4 cloves garlic (minced)
  • 1/3 cup sun-dried tomatoes (marinated in oil & chopped)
  • 1 Tablespoon tomato paste
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon chili flakes
  • 15 ounces canned butter beans (1 can with the liquid added to the pot – do not strain!)
  • 2 Tablespoons coconut cream
  • 1 Tablespoon nutritional yeast
  • 1/2 Tablespoon lemon juice
  • 2 Tablespoons chopped fresh basil
  • Salt & pepper to taste

Instructions

  1. Prep your ingredients by finely dicing the shallots, chopping the sun-dried tomatoes, and mincing the garlic.
  2. In a large pot over medium heat, melt the vegan butter. Add the shallots and garlic, sautéing for 2–3 minutes until fragrant.
  3. Stir in the sun-dried tomatoes, tomato paste, oregano, thyme, and chili flakes; cook for another minute.
  4. Add the canned butter beans with their liquid, coconut cream, nutritional yeast, and lemon juice to the pot.
  5. Bring to a simmer and cook for about 5 minutes to meld flavors and thicken slightly.
  6. Stir in fresh basil leaves and season with salt and pepper to taste.
  7. Serve warm with toasted bread or your favorite sides.
