  • 8 ounces block of Sharp Cheddar Cheese
  • 8-ounce package of cream cheese
  • 1/2 cup olive oil
  • 1/2 cup white grape juice vinegar
  • 3 Tablespoons chopped fresh parsley
  • 3 Tablespoons minced green onions
  • 3/4 teaspoons dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 3 garlic cloves, minced
  • 1 2-ounce jar diced pimiento, drained

Instructions

  1. In a glass jar, combine olive oil, white grape juice vinegar, parsley, green onions, basil, salt, pepper, and minced garlic. Shake well and set aside.
  2. Cut both cheeses into 1/4-inch slices.
  3. In a shallow baking dish, arrange the cheese slices upright.
  4. Pour the marinade over the cheese. Cover and refrigerate for at least 8 hours.
  5. Serve chilled with crackers or fresh veggies.
