- 8 ounces block of Sharp Cheddar Cheese
- 8-ounce package of cream cheese
- 1/2 cup olive oil
- 1/2 cup white grape juice vinegar
- 3 Tablespoons chopped fresh parsley
- 3 Tablespoons minced green onions
- 3/4 teaspoons dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 3 garlic cloves, minced
- 1 2-ounce jar diced pimiento, drained
- In a glass jar, combine olive oil, white grape juice vinegar, parsley, green onions, basil, salt, pepper, and minced garlic. Shake well and set aside.
- Cut both cheeses into 1/4-inch slices.
- In a shallow baking dish, arrange the cheese slices upright.
- Pour the marinade over the cheese. Cover and refrigerate for at least 8 hours.
- Serve chilled with crackers or fresh veggies.
