  • 1/2 cup pure maple syrup
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 large sweet potatoes, peeled and cubed
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 teaspoon fresh thyme leaves (or 1/4 dried thyme)
  • 2 tablespoons butter
  • 1/4 cup chopped pecans (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss cubed sweet potatoes with olive oil, garlic powder, salt, and pepper. Spread on half of the baking sheet.
  3. In the same bowl, mix chicken with remaining olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper.
  4. Arrange the chicken on the other half of the baking sheet without overlapping.
  5. Roast in the oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes are tender.
  6. Optional: Toast chopped pecans in a skillet with butter as a garnish.
