  • 1 cup shredded Parmesan cheese
  • 1 cup Panko breadcrumbs
  • 2 large eggs
  • 4 cloves minced garlic
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup whole milk
  • 2 tablespoons unsalted butter
  • 1/4 cup additional Parmesan for sprinkling
  • 2 tablespoons fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F. Prepare a loaf pan by lining it with parchment paper or greasing it lightly.
  2. In a large mixing bowl, combine ground chicken, Parmesan cheese, Panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and whole milk. Mix until just combined.
  3. Transfer the mixture into the prepared loaf pan and shape it into a loaf.
  4. Melt butter and brush it over the top of the meatloaf. Sprinkle additional Parmesan cheese on top.
  5. Bake in the oven for 45–55 minutes until the internal temperature reaches 165°F and the top is golden brown.
  6. Allow resting for 10 minutes before slicing and serving.
