  • 1 tablespoon lemon zest (from 2 lemons)
  • ½ cup heavy cream
  • 1 large egg
  • 2 tablespoons lemon juice
  • ½ cup powdered sugar (for icing)

Instructions

  1. Preheat your oven to 400 °F. Line a baking pan with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Add cold butter to the flour mixture; use a pastry blender or forks to create coarse crumbs.
  4. In another bowl, whisk together heavy cream, egg, lemon juice, and vanilla extract.
  5. Gradually combine wet ingredients into dry ingredients until just mixed.
  6. Shape dough into a rectangle on a floured surface; fold several times for layers. Chill for at least 30 minutes.
  7. Cut out desired shapes (wedges, rounds, or squares) and place on prepared pan.
  8. Brush tops with heavy cream and bake for 18–20 minutes until golden brown.
  9. For icing, mix powdered sugar and lemon juice until smooth; drizzle over cooled scones.
