  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

  • ¼ teaspoon dried thyme
  • ¼ teaspoon salt
  • 2 bay leaves

Instructions

  1. Heat olive oil in a large pot over medium heat. Add carrots, onion, celery, and garlic; sauté until soft (about 5 minutes).
  2. Add chicken and broth; stir in seasonings. Bring to a boil.
  3. For instant pot: Seal and cook on high pressure for 15 minutes. For stovetop: Reduce heat and simmer for about 30 minutes until chicken is cooked through.
  4. Shred the chicken into bite-sized pieces.
  5. Stir in orzo pasta and cook according to package instructions (about 8 minutes). Mix in lemon juice before serving.
