  • 2 large chicken breasts
  • 1 pound uncooked potato gnocchi
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon lemon juice
  • Fresh baby spinach
  • Parmesan cheese
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic (minced)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon pepper seasoning
  • Salt & pepper (to taste)

Instructions

  1. Cut the chicken breasts in half lengthwise to create thinner cutlets. Season with garlic powder and lemon pepper on both sides.
  2. Heat olive oil and butter in a skillet over medium-high heat, then sear the chicken cutlets for about 5-6 minutes per side until golden brown. Set aside.
  3. In the same skillet, reduce heat to medium and sauté minced garlic for 30 seconds. Then add chicken broth and lemon juice, scraping up any browned bits from the pan.
  4. Stir in heavy cream and uncooked gnocchi, allowing it to bubble gently uncovered for 5-7 minutes until gnocchi are cooked through.
  5. Remove from heat, stir in parmesan cheese and spinach until wilted, then return the chicken to the skillet, spooning sauce over it before serving.
