1 pound ground beef
1/2 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1 tablespoon ginger, grated
2 tablespoons soy sauce
2 tablespoons brown sugar
1 1/2 tablespoons gochujang
1 teaspoon sesame oil
1 tablespoon rice vinegar
3 cups cooked white rice
1/2 cucumber, sliced
1/2 cup carrots, julienned
2 green onions, chopped
1 tablespoon sesame seeds (optional)
Instructions
In a mixing bowl, combine ground beef, breadcrumbs, egg, minced garlic, grated ginger, and soy sauce. Mix until just combined and roll into bite-sized meatballs.
Heat oil in a skillet over medium heat. Cook meatballs for 8–10 minutes until browned and cooked through. Set aside.
In the same skillet, whisk together brown sugar, gochujang, rice vinegar, sesame oil, and optional garlic and ginger. Simmer until slightly thickened.
Return meatballs to the skillet and toss to coat in the sauce.
Serve over cooked rice and top with sliced cucumber, julienned carrots, chopped green onions, and sesame seeds if desired.
