  • 2 kg turkey breast (skin on)
  • 1 head garlic
  • 1 onion
  • 5 sprigs thyme (or 2 tsp dried)
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1 tsp paprika
  • 2 tsp salt
  • 5 grinds black pepper
  • 1 1/22 tbsp olive oil
  • chicken stock/broth (or water), for topping up liquid
  • 4 tbsp butter
  • 1/4 cup flour

Instructions

  1. In a mixing bowl, combine garlic powder, onion powder, paprika, salt, and black pepper to create a rub. Add olive oil to form a paste.
  2. Pat the turkey dry and generously apply the rub all over.
  3. Place halved garlic and onion in the slow cooker; put the turkey breast on top.
  4. Cook on LOW for about 6 hours or until the internal temperature reaches 165°F (75°C).
  5. Let the turkey rest for 20 minutes before broiling for crispy skin.
  6. For gravy, strain cooking liquid and make a roux with butter and flour before adding back broth.
