  • 1/2 head of cabbage
  • 1/4 cup water
  • 1/2 sweet onion
  • 1/2 bell pepper (any color)
  • 68 baby carrots
  • 2 tsp minced garlic
  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • 2 tsp onion powder
  • 1 tsp seasoned salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 Scotch bonnet pepper (optional)

Instructions

  1. Roughly chop cabbage and rinse in a strainer.
  2. Dice carrots, sweet onion, and bell pepper.
  3. In a medium-large pot over high heat, add olive oil and 1 tablespoon of butter. Once melted, stir in minced garlic.
  4. Add chopped vegetables (bell pepper, carrots, onion) and cook for an additional 2-3 minutes.
  5. Stir in chopped cabbage along with the remaining butter and spices.
  6. Pour in water and cover the pot. Cook on high for one minute before reducing to medium-low for another 10 minutes.
  7. Adjust cooking time for desired crunchiness: an extra 10 minutes for crunchier cabbage or up to 15 minutes for softer cabbage.
  8. Remove thyme sprigs and optional Scotch bonnet before serving.
