  • half of an English cucumber, quartered and thinly sliced
  • half of a small red onion, thinly sliced
  • quarter head of radicchio, thinly sliced
  • 5 ounces turkey slices, thinly sliced
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup chopped fresh basil leaves
  • 1/2 cup sliced Kalamata or black olives
  • 1/4 cup olive oil
  • 2 tablespoons apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, grated
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly-ground black pepper

Instructions

  1. Combine the dressing ingredients in a mason jar. Cover tightly with the lid, then shake vigorously until fully emulsified.
  2. In a large mixing bowl, add all the salad ingredients. Drizzle the prepared vinaigrette evenly over the top. Gently toss everything together until well combined.
  3. Serve immediately. For an extra touch, garnish with additional Parmesan cheese and freshly ground black pepper.
