  • 2 medium potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup peas (fresh or frozen)
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 tablespoon tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat until shimmering.
  2. Sauté the chopped onion and minced garlic for about 5 minutes or until the onions are translucent.
  3. Stir in sliced carrots and diced potatoes; cook for another 5 minutes until slightly softened.
  4. Add green beans, peas, and bell pepper; mix well.
  5. Pour in vegetable broth along with tomato paste, soy sauce, thyme, and rosemary; stir to combine.
  6. Bring to a boil over high heat, then reduce heat to low and simmer covered for 30–40 minutes until all vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving warm.
