  • 35 pound boneless beef chuck roast
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1 pound baby red potatoes
  • 4 large carrots (chopped)
  • 1 large yellow onion (diced)
  • 4 cups beef broth
  • 2 tablespoons balsamic vinegar (as a Worcestershire sauce alternative)
  • 1/4 cup water
  • 2 tablespoons cornstarch
  • Chopped parsley or thyme for garnish (optional)

Instructions

  1. Mix salt, onion powder, garlic powder, black pepper, and smoked paprika in a bowl. Rub evenly over the roast.
  2. Set the Instant Pot to sauté mode, add oil, and sear the roast for 2-3 minutes on each side until browned. Remove and set aside.
  3. Pour in beef broth and balsamic vinegar to deglaze the pot, scraping up any browned bits.
  4. Return the roast to the pot and add potatoes, carrots, and onions around it.
  5. Lock the lid and cook on high pressure for 60 minutes (80-90 minutes for larger roasts). Allow natural pressure release for 10 minutes before quick releasing any remaining steam.
  6. Transfer roast and veggies to a platter; shred meat with forks.
  7. To make gravy, whisk together water and cornstarch until smooth; stir into simmering cooking liquid until thickened.
