  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese, rind removed and cut into small pieces
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, heat olive oil and add fresh cranberries; cook until softened. Stir in honey, orange juice, cinnamon, ginger, salt, and pepper. Cook until slightly thickened; set aside to cool.
  3. Cut pockets in the chicken breasts and stuff with Brie cheese and cranberry mixture. Secure with toothpicks.
  4. Sear the stuffed chicken in a large oven-safe skillet for 2-3 minutes on each side until golden brown.
  5. Top with panko breadcrumbs mixed with melted butter, then transfer the skillet to the preheated oven and bake for 20-25 minutes until cooked through.
