  • ¼ cup high smoke point cooking oil (avocado oil or canola oil)
  • 5 tbsp butter or ghee

Instructions

  1. Preheat your Blackstone griddle to medium-high heat.
  2. Pat the steaks dry and allow them to rest at room temperature for 5–10 minutes.
  3. Coat the steaks lightly with cooking oil and season all sides with steak seasoning.
  4. Oil the griddle surface and place the steaks down; cook for 1 minute per side.
  5. Flip every 30 seconds for an additional 2 minutes while crisping the fat cap.
  6. Check internal temperature (remove at around 120°F), let rest for 10 minutes.
  7. Add butter or ghee to the griddle with herbs; return steaks and baste with melted herb butter.
  8. Check final temperature (remove at 130°F for medium-rare) before slicing and serving.
