  • 1 pound butternut squash, peeled and cut into chunks
  • 1 pound Brussels sprouts, trimmed and halved
  • 1/2 tsp ground cinnamon
  • 3 tbsp olive oil
  • 4 tbsp honey, divided
  • Salt to taste
  • 1/2 cup dried cranberries

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with aluminum foil and spray it lightly with non-stick spray.
  2. In a large bowl, toss the butternut squash with ground cinnamon until coated.
  3. Add the halved Brussels sprouts, drizzle with olive oil and one tablespoon of honey, then sprinkle salt to taste. Toss until well combined.
  4. Spread the mixture evenly on the prepared baking sheet and roast for 20 to 30 minutes until fork-tender.
  5. Five minutes before removing from the oven, sprinkle dried cranberries over the vegetables.
  6. Remove from the oven, transfer back to the bowl, add the remaining honey, and toss gently before serving.
