  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 cups cooked rice
  • 1/3 cup soy sauce
  • 1/3 cup honey
  • 2 tbsp ketchup
  • 1 tbsp vinegar
  • 1 tbsp cornstarch
  • 1 tbsp olive oil

Instructions

  1. Combine ground beef, breadcrumbs, egg, minced garlic, and chopped onion in a mixing bowl; mix until just combined.
  2. Form into small meatballs and set aside.
  3. Heat olive oil in a skillet over medium heat; brown the meatballs on all sides.
  4. Whisk together honey, soy sauce, ketchup, vinegar, and cornstarch in a saucepan; simmer until slightly thickened.
  5. Grease a baking dish and layer cooked rice and chopped bell peppers at the bottom.
  6. Place browned meatballs over the rice layer and pour the honey garlic sauce evenly on top.
  7. Cover with foil and bake at 375°F (190°C) for 25 minutes; then remove foil and bake for an additional 10 minutes until bubbly.
